Deficiency of diaminoxidase (DAO) is one of the most common causes of histamine intolerance. The enzyme DAO is responsible for breaking down histamine in the body. When it can't break everything down, it builds up and you experience symptoms of histamine intolerance.

In addition to taking a dietary supplement with DAO, there are some easy-to-implement changes to your eating habits that support healthy levels of the DAO enzyme.

DAO and histamine intolerance

Research shows that at least 1% of the world's population suffers from histamine intolerance and almost 80% of them are women.

Histamine intolerance results from the overproduction and accumulation of histamine in the body and the inability to break it down. This can cause a range of chronic symptoms such as allergic reactions, gastrointestinal disorders (IBS), congestion and asthma, among others.

Although it can be diagnosed by consulting a doctor and observing the common symptoms of histamine intolerance, going deeper and finding the root cause is essential to managing the symptoms. One common cause is a deficiency of DAO enzymes.

Studies show that DAO deficiency accounts for more than 70% of all cases of histamine intolerance.

So how do you know if this is the root cause of your histamine intolerance?

Diaminooxidase deficiency: common causes

When your body needs to reduce histamine levels, it needs two naturally occurring enzymes known as the enzyme DAO and histamine N-methyltransferase (HNMT). If these enzymes are not available or if your body cannot produce them sufficiently, it can cause histamine to build up.

There are several factors that can cause DAO deficiency, e.g:

  • Genetic inheritance - individuals may have a genetic mutation that leads to a deficiency of the enzyme diaminoxidase.
  • Medications - both prescription and over-the-counter medications can contribute to reduced levels of the enzyme diaminoxidase. It is important to consult a doctor about side effects and read labels.
  • Hormonal imbalance - an imbalance of estrogen and progesterone can affect many normal functions of your body, including histamine levels.
  • Gastrointestinal disorders - disorders such as irritable bowel syndrome (IBS), Crohn's disease, ulcerative colitis, celiac disease, and small intestinal bacterial overgrowth(SIBO) can contribute to inflammation in your body that causes symptoms similar to histamine intolerance and even affects your body's ability to produce the right amount of the enzyme DAO.
  • Nutrient deficiencies - a lack of vitamin B6, vitamin C, zinc or copper can put you at risk or contribute to a DAO deficiency.
  • Eating histamine-rich foods - some foods can inhibit the function of the DAO enzyme or contribute to symptoms by loading the body with more histamine than your enzymes can break down.
  • Alcohol - Alcohol is a very strong inhibitor of the DAO enzyme and so contributes to increased histamine symptoms, and also contains large amounts of histamine itself.

DAO deficiency can also affect multiple organs (lungs, skin, cardiovascular system, brain, digestion, etc.), leading to many other symptoms. Depending on the severity of the deficiency, these symptoms may occur after eating certain foods.

It's also important to note that symptoms don't always appear immediately either. It can take a whole day for the accumulated histamine to build up in the body. So the food you ate in the morning may have caused the drowsiness or skin irritation you are now feeling.

Because it can be difficult to pinpoint the triggering factors, an elimination diet full of low histamine foods helps many people identify histamine intolerance and understand which foods to avoid, but we will discuss some of these foods below.

7 ways to naturally increase DAO enzyme levels

To date, many studies have been conducted on the prevention of DAO deficiency in the body, and researchers have even identified ways to potentially prevent and even reverse histamine intolerance.

1. Start a low histamine diet

A recent study found that dietary modification is the first step to reducing symptoms associated with histamine intolerance. By eliminating foods high in histamine from your diet, you allow your body to catch up and process the amount of histamine already present. The study also found that these dietary modifications positively affect the movement of DAO enzymes throughout the body.

2. Balance your fat intake

When it comes to updating your diet, some of the most interesting and relevant results for increasing DAO enzymes were related to fat consumption.

Studies have shown beneficial results when patients increased their intake of omega-9 fatty acids - monounsaturated fats that are the main source of oleic acid. In particular, high-quality olive oil has been shown to increase the release of the enzyme DAO into the bloodstream by up to 500%!

Oleic acid has been shown to have other health benefits, such as lowering blood pressure, especially when consumed as part of a Mediterranean-type diet. You can cook with olive oil or include nuts such as macadamia nuts in your diet to prevent DAO deficiency.

Meanwhile, inflammatory arachidonic acid, an omega-6 polyunsaturated fatty acid found in tripe, fatty red meat and dairy products (especially hard cheese and eggs), has been found to cause the highest increase in histamine compared to other foods.

Reducing the amount of omega-6 fatty acids in your diet, which are found in processed foods and vegetable oils, while increasing the amount of omega-3 fatty acids (including fatty fish and seafood) you consume has been shown to reduce inflammation and reduce symptoms of histamine intolerance.

An important factor in balancing fats is the use of heat-stable oils, including ghee and pressed coconut oil, when baking and cooking at high temperatures. For light cooking at low temperatures, you can regularly use olive oil and macadamia oil.

3. Eat the right protein

The process of protein digestion is largely responsible for the release of the enzyme DAO in the intestines. This helps the body to deal with ingested amines and histamines while preventing the buildup of histamine levels in the body.

That's why it's important to eat clean, healthy proteins. Look for grass-fed proteins, organic proteins and fresh seafood to increase DAO activity.

4. Minimize the amount of harmful ingredients

The common theme of this list is healthy, wholesome foods. It's no coincidence! It's important to remember that avoiding artificial additives and pesticides can have a huge impact on your digestion, DAO production, and even food allergies.
