Extra virgin olive oil Manaki – from the region Ermionida (Peloponnese)

Ootopia Manaki comes from the coastal slopes of the Ermionida region in the Peloponnese, where the mild climate and sea currents give the oil its elegant character. It is a monocultivar, so the taste highlights the pure expression of the variety and place of origin.

Manaki variety – subtlety that doesn't overpower

Manaki is valued for its "polite" taste: gently green tones of almonds and freshly cut grass are complemented by light red fruit. Bitterness and pungency are balanced, so the oil doesn't overpower ingredients and beautifully highlights their natural flavor. Great for finishing salads (e.g. Caprese), fish, and grilled vegetables.

Flavor palette and kitchen use

The oil feels fresh and harmonious, with a long, clean aftertaste. It shines best in cold cuisineor in the final seasoning of ready meals, where it adds juiciness and elegance to the dish without unnecessary aggressiveness.

Natural source of polyphenols

Polyphenols naturally present in olive oil contribute to the protection of lipids in the blood from oxidative stress.* The polyphenol content of this oil has been laboratory verified and meets the condition for the use of the European health claim (with a daily intake of 20 g).

*Regulation (EU) No. 432/2012.

What else might you need with Manaki olive oil?

  • Protein crackers with cheese flavor – A crispy, neutral base with a high content of proteins highlights the delicate fruity and almond tones of Manaki. It creates an ideal "canvas" for oil tasting, canapés, and quick appetizers.
  • Balsamic vinegar – A classic partner for a 1:1 dressing with olive oil; adds a pleasant sweet and sour depth to caprese, leafy salads, and grilled vegetables. A few drops of Manaki with balsamic highlight its fruitiness and clean finish.
  • Capers in brine – The spicy saltiness and fresh acidity of capers beautifully contrast with the gentleness of Manaki and emphasize its herbal nuances. Great for salads, on fish, tartare/carpaccio, and bruschetta.
  • Dried tomatoes in oil – Concentrated tomato umami and light sweetness go well with the fruity profile of Manaki. Suitable for bruschetta, pasta, and salads; a few drops of oil blend the flavors into a harmonious whole.

Manaki oil production process

Harvesting Manaki olives in Ermionida

Harvesting Manaki olives

Olives of the Manaki variety from the Ermionida (Peloponnese) region are harvested at full ripeness to ensure they are fresh and healthy – the foundation for quality extra virgin olive oil.

Sorting and cleaning olives

Sorting and cleaning

After harvesting, careful sorting and removal of impurities (leaves and dust) follow, so that only quality fruits are used in production.

Grinding olives into paste

Grinding olives

Fresh olives are ground into paste, preserving the aromatic substances and natural character of the Manaki variety.

Kneading olive paste

Kneading the paste (malaxation)

The olive paste is briefly kneaded to combine the small oil droplets and highlight a clean, balanced flavor.

Separating oil

Separating oil

In the next phase, oil is separated from water and solid parts, resulting in pure extra virgin Manaki olive oil with a delicate profile.

Storage and bottling

Storage and bottling

The finished oil is carefully stored and then bottled. Thanks to the gentle process, it retains the freshness, aroma, and flavor typical of Manaki from Ermionida.

FAQ

Where does Manaki come from and what does it mean?

Manaki is a traditional Greek variety from Peloponnese, grown in the Ermionida region (e.g., around Ermioni). The Ootopia Manaki oil is a monocultivar – it comes from a single variety, which brings a pure and consistent flavor expression.

Triangle

How does this oil taste and what is it suitable for?

Typical are gently green tones of almonds, freshly cut grass, and light red fruit. The taste is harmonious, with balanced bitterness and gentle pepperiness. Great for salads (e.g., Caprese), fish and ceviche, grilled vegetables, and as a final seasoning for finished dishes.

Triangle

Is it filtered?

Filtration may vary by batch. Check the label or batch protocol.

Triangle

Why is it better than common market blends?

The difference is in origin and consistency. The Manaki monocultivar has a traceable origin and a consistent sensory profile, while blended oils often combine fruits from different regions and harvests, which may lack character and have a lower content of natural antioxidants.

Triangle

How to work with temperature and what does "cold" mean?

For extra virgin oils, mechanical extraction is used. The term "cold" generally means that extraction takes place at temperatures up to 27 °C to preserve aroma and polyphenols. It is best showcased in cold cuisine or when finishing prepared dishes.

Triangle

How to store it properly to maintain quality?

Protect from light, heat, and air. Store in the dark at 15–20 °C and close the bottle well after use. Dark glass helps limit oxidation and protects the sensitive components of the oil.

Triangle

How long does it last after opening?

Ideally consume within 2–3 months after opening, at the latest within 6 months. Freshness is key for flavor and polyphenol content. Also monitor the harvest year and the best before date.

Triangle

What are its health benefits and how much polyphenols does it have?

Analysis confirmed a high polyphenol content (total approx. 634.7 mg/kg). Hydroxytyrosol, tyrosol, and their derivatives reach 11.4 mg/20 g – this meets the condition of Regulation (EU) No. 432/2012: olive oil polyphenols contribute to the protection of blood lipids from oxidative stress (with a daily intake of 20 g).

Triangle

Why might the oil be slightly bitter or pungent?

Bitterness and pepperiness are caused by natural polyphenols (e.g., oleocanthal). In Manaki, they are usually gentler, providing a harmonious taste and long aftertaste.

Triangle

Is this oil suitable for special diets?

It is a plant-based product naturally cholesterol-free and carbohydrate-free. It fits well into the Mediterranean diet and common nutritional regimes for most people. For specific diets, follow expert recommendations.

Topos

When Ootopia was looking for the ideal "topos" for their business, the Ermionida peninsula enchanted them. It is a beautiful natural area that won their hearts and where they decided to locate their headquarters. The picturesque hills above the ancient town of Ermioniida offer optimal conditions for olive growing thanks to low rainfall, making the area ideal for growing native Greek olive varieties alongside selected Mediterranean varieties.

The Ermionida peninsula, just two and a half hours' drive from Athens, is surrounded by the Gulf of Argolida and the Myrtoon Pelagos Sea. The fresh sea breeze blowing from the historic islands of Spetses and Hydra further increases the fertility of the soil. An otopia is an imaginary, idealized place that has highly desirable or near-perfect qualities for its inhabitants. In this very own Ootopia, they have created the ideal place to produce their own olive oil, welcome their friends, deepen and broaden their knowledge of the land and its treasures, and nurture a community of connoisseurs.

ootopia topos

Harmony

In this place, they strive to achieve perfect harmony of body and soul by ingeniously engaging all their senses and activities. Guests of Ootopia can stroll around, smell the thyme and oregano, enjoy the beautiful landscape and feel the sea breeze on their face.

We recommend a visit to the olive oil production facility (see picture below), which is carefully designed to be fully in line with the environment, and also in line with Ootopia's philosophy of using the latest technology, but only as a means to protect nature and get the best out of it, never to alter it. Not to mention that visitors can even participate in the harvest, take olive oil tasting classes and end the day with a glass of wine and a revitalising meal prepared by their chefs.
