E471 – mono- and diglycerides of fatty acids are emulsifiers. They help bind ingredients that otherwise don’t mix well (for example, fat and water), stabilising the dough and improving consistency. They are made from vegetable or animal fats and are used mainly to keep the product’s structure consistent across batches and to help maintain quality during storage. Here too, it’s not a mandatory ingredient – it’s a technological aid that some recipes use and others (such as simpler recipes) do not.

Why is palm oil used in standard sticks?
