But what is quercetin?

Quercetin is a yellow plant dye. Its name is derived from the Latin work for oak forest - quercetum - as it was originally identified in oaks.

Quercetin is a flavonol that belongs to the category of polyphenols. Polyphenols play an important role in the plant kingdom. One of these roles is to protect plants from environmental stresses such as pests and UV radiation from the sun.

Because of this role, they tend to concentrate in parts of the plant that come into greater contact with the outside world. Red onions are one of the better food sources of quercetin.

However, quercetin is not evenly distributed in the red onion; it is concentrated in the outer skins (which are usually discarded when peeling the onion before use) and in the part closest to the root. The best dietary source of quercetin may be capers.
