Using crushed cacao beans in the kitchen
Crushed cacao beans (also known as cacao nibs) are without the shell and without sugar. They have a pure cacao aroma and a naturally bitter, slightly tangy flavor.
They are not chocolate chips nor cooking chocolate – they are not sweet and do not melt at higher temperatures. In dishes, they maintain a pleasant crunch and enhance texture.
The quickest way to use them is in muesli, yogurt, and smoothie bowls; the bitterness is balanced by fruit, coconut, or nut butters. Also great as a topping for porridges and desserts.
In baking, they replace chocolate chips in cookies, banana bread, or brownies (approximately 1–2 tablespoons per serving). For a more intense aroma, briefly dry roast or lightly grind them into homemade granola and bars.
Pairing tips and creative uses: combine with banana, berries fruit, orange, coconut, dates, and nut butters.
For desserts, sprinkle on melted chocolate and let set for a crunchy contrast; for drinks, gently crush them as a topping for cappuccino or iced latte.
In slightly savory recipes (e.g., spiced sauces), use a pinch for greater depth of flavor with cinnamon, cardamom, or chili.

FAQ
RAW cacao nibs – organic crushed cacao beans: What exactly does “RAW” mean?
“RAW” means that the nibs are unroasted, only gently dried and mechanically crushed from cacao beans. Due to the low processing temperature, they retain their natural aroma and content of cacao butter.

RAW cacao nibs – organic crushed cacao beans: Why don't they melt like chocolate when baking?
Nibs are solid pieces of cacao beans without sugar and emulsifiers. When heated, they tend to roast slightly and release some cacao butter, but remain crunchy – unlike chocolate, which is formulated to melt easily.

RAW cacao nibs – organic crushed cacao beans: Can they be eaten straight from the package?
Yes. You can eat them plain as a quick snack or use them as a topping for yogurt, porridges, and desserts. They have a naturally bitter taste; start with a smaller portion and combine with fruit or nuts.

RAW cacao nibs – organic crushed cacao beans: How to store them after opening?
Keep them airtight, in a dry place, away from heat and foreign odors. For the best crunch, consume within a reasonable time; minimum shelf life is on the package.

Why the name “Ceylon” when the country is called Sri Lanka?
Ceylon is a traditional designation of origin for Sri Lankan teas and spices. The brand uses it to emphasize the terroir and single-origin origin of the ingredients.

Can the origin of a specific batch be traced?
The package usually has a batch and best before date. For more detailed traceability (batch origin, tests), you can contact customer support with the batch number.

How does the brand approach quality and testing?
Ingredients undergo batch checks within certified suppliers. For selected items, protocols (e.g., microbiology, residues) can be requested to verify quality.

How to properly sort packaging after consumption?
Glass goes in glass, paper in paper. For inner bags, follow the recycling symbol; without a symbol, they usually belong in mixed waste.

The Ceilon Kokonati brand was established in 2013. In its range you can find a variety of high quality and affordable products made from sustainably produced coconuts, spices and tropical fruits.
The brand's name refers to the country that its founders consider home, Ceylon, Sri Lanka, where the coconuts for the coconut line of products are grown and processed. Ceylon, a British Crown Colony from 1815-1948, is now known as Sri Lanka, but the founders of the brand prefer to call it Ceylon because it definitely sounds more exotic and "pure Ceylon" is a brand in itself, reminiscent of the fresh unique essence of pure Ceylon tea. "Kokonati" on the other hand is Maori for coconut, so absolutely the most appropriate brand name for the most coconutty goodness ever.
The Ceilon Kokonati brand is run by a married couple. The female founding half is Mrs. Bûmika, which means Lady of the Earth in Sanskrit. Her great-grandfather was one of the pioneers of coconut oil pressing in Ceylon, making her the fourth generation of coconut oil presser. The male founding half, Mr. Mosqi, in turn, is originally a pure Ceylon tea grower.
Ceylon Kokonati is wholly owned and operated in New Zealand. Loose products from Kokonati uses several ethical brands that produce clean, organic food and beauty products. By selling Kokonati products, rural communities and traditional livelihoods are supported. All their products are ethically harvested and there is almost no waste in their production. Each part of the coconut is used in the production of a different product. Kokonati products are single-ingredient, packaged directly at the source, never mixed, single-species, non-GMO and vegan.
With a passion for organic, regenerative farming, sustainability and collective partnerships, Kokonati products come only from small farms and mills in rural villages in Sri Lanka. Each Kokonati product is produced in a specialized mill that produces only that type of product. Quality is therefore the best it can be, and every step of production is backed by the experience and knowledge of many generations. Ceylon is blessed with an abundance of healthy, exotic fruits, nuts, herbs and spices.
Ceylon Kokonati follows the principles of balanced living - live and let live.
They're trying to keep everything in even better condition than when they found it..
